Peppermint and chocolate – it’s a frosty matchup we’re kind of obsessed with around here. Each pillowy marshmallow is infused with real peppermint oil and hugged by two snappy dark chocolate shortbread cookies. Maker Laura Curtis calls these marshmallow sandwich cookies “malvis,” from malvavisco, the Spanish word for marshmallow.
She was inspired by toasty s’mores and summer campfires on Lake Michigan, but she picked up her technical skills at the Culinary Institute of America, and then working as a research and development chef for a large supermarket chain.
One bite has us feeling newly minted.
